Maria was kind enough to share her recipe with us. She prepared
these for her Potato Chip Quilt Class and everyone raved about them.

FRUIT SQUARES
from Maria Sendzik

Apricot Squares (Hungarian Recipe)

2 sticks butter – room temperature
1 egg yolk
1 C sugar
2 C flour
3/4 C finely chopped walnuts
1 10 oz jar apricot filling (or any flavor)/jam

Cream butter with sugar in large bowl
Add egg yolk and mix well
Stir in flour – add walnuts – blend
Divide dough in half.
Spread half in 13 x 9 pan
Cover with filling. top w/remaining dough (crumble on top)
Bake 40-45 min. until golden brown – 350. Cook and cut into squares.


MARIA'S PEANUT BUTTER CHOCOLATE RICE KRISPIE TREATS

8 oz. Fluff (1/2 a container)
1 C. chunky peanut butter

Put them together in a big bowl and microwave for 30 seconds or a
minute just to soften. Stir to mix just streaky looking. The Fluff should
not overcook.

Add:
3 c. rice Krispies
1/2 c. peanut butter chips

Stir. I put the bowl back in the microwave for about 30 sec. to soften it
up for easier stirring. Stir again. Spray 9X13 pan with PAM to avoid
sticking. Spread it smoothly. Pat it down firm. Refrigerate 1 hour. Cut
into bars. Store in sealed container.


JEFF'S FAVORITE ORANGE SUGAR COOKIES
(Sue's recipe)

¾ cup sugar
½ cup butter
1 egg
½ tsp baking powder
2 tbsp cream or milk
½ tsp vanilla extract
1 tsp orange extract
1 ½ cups cake flour

Preheat oven 400 degrees. In a large bowl cream together sugar and
butter, add egg. Mix well, then add baking powder, cream, vanilla and
orange extracts. Mix well then add the flour.  Drop ½ tsp size dough
onto cookie sheet, bake 6 minutes until edges are brown.


VICKIE'S APPLE CAKE

4 eggs
2 c sugar
1 c oil
2 c flour
4 tsp. baking powder
2 tsp vanilla
1 pinch salt
4 tsp cinnamon
7 Granny Smith Apples, sliced thin

Sprinkle with sugar and cinnamon on top before baking. Bake 350
degrees for 50-60 min.
BLUEBERRY CAKE

¼ lb butter
¾ cup sugar
1 egg
½ cup milk
1 tsp vanilla
2 cup flour
2 tsp. baking powder
½ tsp salt
1 pt blueberries (can use frozen or fresh)
(having the ingredients at room temp. helps the mixing)

Topping
1/2 cup sugar
1 tbsp butter (soft)
1/2 tsp cinnamon

Cream the butter.  Beat in the sugar and egg until fluffy.  Stir in
milk and vanilla.  Stir in flour, baking power and salt.  Fold in
the blueberries.  Spoon into a 9x9 inch greased pan.  Mix the
topping ingredients lightly with a fork, or your fingers, till
crumbly and spread over batter.  

Bake at 350° for 50 min.  Check for doneness with a toothpick.

LEMON PECAN SCONES
presented by Galena Street Mountain Inn  

2 cups unbleached white flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
Grated zest of one lemon
1 1/4 cups heavy cream
1/2 teaspoon lemon extract
1 tablespoon melted butter
1 tablespoon sugar

Preheat oven to 425°. Combine the flour, sugar, baking powder,
and salt in a bowl. Add the lemon zest and pecans. In a
measuring cup, stir together heavy cream and lemon extract.
Stir into dry ingredients until dough holds together in a rough
mass. Do not overmix. The dough will be quite sticky. Lightly
flour a board and transfer the dough to it. Knead the dough 8 or
9 times. Pat into two circles about 6 inches round. Brush melted
butter over the top and side of the circle of dough and sprinkle
the sugar on top. Cut each circle into 6 wedges and place
pieces on an ungreased baking sheet, allowing about an inch
between pieces. Bake at 375° for 15-20 minutes or until golden
brown.


CHOCOLATE MINT SQUARES
Susan's recipe from the House Tour

Cake Layer:
1 cup sugar 1/2 teaspoon salt (optional)
1/2 cup butter 1 teaspoon vanilla
4 eggs 1 16oz. can Hersey’s syrup
1 cup flour

1. Oven 350 degrees.
2. Cream butter and sugar.
3. Add eggs
4. Beat in remaining ingredients.
5. Bake for 30 minutes (no longer) in greased 9 by 13 pan.
6. Cool in pan.

Mint Layer
2 cups confectionery sugar
3 - 4 tablespoons Creme de Menthe
1/2 cup butter (creamed) green food coloring

1. Mix well and spread on cooled cake.

Glaze
6 oz. (1 cup) semisweet chocolate chips
6 tablespoons butter

1. Melt together (tip - microwave on medium).
2. Cool a bit before spreading on top of mint layer.
3. Chill before cutting into squares (tip - chill just enough so
chocolate will cut and not crack).
